Cook these ahead while you are doing other chores and then they are ready to go onto a salad.
1 bunch beets, washed greens removed
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1/4 cup water
1/4 teaspoon salt
Fresh ground black pepper
1/4 teaspoon each dried thyme and rosemary
Heat the oven to 375 degrees. In a deep baking dish put all ingredients inside and cover with a tight fitting lid or with foil. Depending on the size of the beets cook them until they can be easily pierced with a knife. This could take 45 minutes to over an hour. When they are done peel them and store them in the fridge.
