I keep seeing this dish with raw kale, it can be eaten right away but can easily keep for a few days like coleslaw. You can buy a prepared dressing if you like, I recommend one without preservatives, they are usually in the refrigerated section of the produce department.
2 cloves garlic, minced
2 anchovies, minced
2 Tbs lemon juice
1/2 tsp salt
1/2 tsp fresh ground pepper
1/2 cups freshly grated parmesan cheese
2 Tbs mayonnaise
2 Tbs olive oil
1 bunch of Lacinato kale, thinly shredded
Combine all ingredients and let stand for 30 minutes
