Squash Pizza

2 Summer squash, sliced in half with seeds scooped out
Salt and pepper
Your favorite pizza sauce
3/4 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, grated
Your favorite pizza toppings, coarsely chopped

To keep the squash from rolling around, cut a sliver, about 1/4”, off the bottom of each half. I combined the cheese and toppings to help to keep everything stuck together. I like the parchment paper to help control the mess, if things do slide off when the cheese is melting. If you don’t have parchment, you can use aluminum foil, but the main purpose is to help with cleanup.

Season squash halves with salt and pepper. Spread with a layer of pizza sauce. Combine cheeses with your pizza toppings in a small bowl then spread over the sauce on top of the squash. Place the squash on a parchment lined baking sheet. Bake a 400 degrees until the cheese is bubbly.
