Fava Bean Puree  
2 cups parboiled fava beans, shucked and peeled
2 Tbs olive oil, divided
2 cloves garlic chopped
1 tsp lemon juice
1 Tbs fresh mint leaves or other fresh herbs

Cook fava beans in a large skillet with 1 Tbs olive oil, until very tender, add water if necessary to make sure they are cooked through without browning. In a food processer combine, the beans, the 2nd tablespoon of oil, garlic, lemon juice and fresh herbs. Process until smooth, serve as a dip or on toasted baguette.
