Fava Beans

Background Information:
Fava Beans are only available for a few weeks in the spring.

Basic Cooking Strategies:
Fava Beans grow in a pod like peas and green beans, but they have an additional inner peel around each bean. This peel is edible and in some smaller beans it’s not worth taking off. To prepare the beans, shuck the beans from the pod, then bring a pot of water to a boil, cook the beans for about 30 seconds. Remove them from the water, let them cool and then the peel is easily removed from the bean inside.
Fava beans are great sautéed with other vegetables or tossed in a dish with pasta or rice. Cook them completely in salted water and then puree, like hummus with olive oil, garlic and lemon juice.

Storage Information:
Use fava beans within a 4-5 days of receiving them. If not used right away, they can be shucked and peeled, then freeze for use later.
