2 pounds fava beans removed from the pod
1 tablespoon olive oil
1 tablespoon garlic, minced
3/4 cup water
Salt to taste
Fill a large pot with water, bring to a boil. Add fava beans and cook for 30 seconds. Remove beans from the water and peel the outer skin away from the bean and discard. In a sauté pan heat the olive oil and garlic over medium heat, until the garlic is fragrant. Add the peeled fava beans and cook for 5-10 minutes until soft, adding water to keep from browning. Season to taste with salt. Serve immediately.
