Spring Vegetable Pasta  

2 large leeks, sliced or 1/2 cup diced onion
1/4 tsp salt
2 Tbs olive oil
2 carrots, peeled and diced small
1 cup fava beans, shucked and peeled
1 Tbs fresh parsley, chopped
1 Tbs fresh chives, sliced
3-4 cups cooked bow-tie pasta or other small shape
1/4 cup parmesan cheese

In a very large sauté pan, over medium high heat cook the oil and leeks for about 2 minutes, add the carrots and continue cooking for 2 minutes. Add the fava beans and cook for another 2-3 minutes, checking the carrots and beans for doneness. Stir in the parsley, chives, pasta and parmesan cheese, serve immediately.
